WATT'S COOKING RECIPE CONTEST

Thank you to everyone who entered the Watt’s Cooking Recipe Contest held during the month of October to celebrate Public Power and Public Natural Gas Week. All the recipe entries were judged by Frank Bookhardt, continuing education chef at Nash Community College, based on their creativity and content. Congratulations to the following winners!

Winning Recipes

First Place: German Style Pulled Pork

Ingredients:
1 6-8 lb. Boston Butt
1 Tbsp. whole grain mustard
1 Tbsp. horseradish
1 12 oz. beer – Lager works best, but use your favorite (especially a good German wheat beer)
1 15 oz. can sauerkraut
1 Tbsp. Caraway seed Salt & pepper
1 granny smith apple – chopped (can leave skin on if you like)
Cooking Instructions:
Preheat crockpot on high. Mix horseradish and mustard together to form a paste. Rub on meat. Season with salt and pepper. Place in crockpot for about 30 minutes until it starts to brown. Pour in the beer. It should come about 2/3 of the way up on the meat. If needed, add more beer. Let cook on low for about 8 hours turning half way through. The timing will depend on the wattage of the crockpot and size of meat. Meat should be fork tender. Remove from crockpot, and using two forks pull pork apart. Return to crockpot, mix in sauerkraut, apple, and caraway seed. Cook on high for about an hour, or until apple is soft and flavors have had time to mix. Serve on your favorite roll, ideally a good Kaiser or Kimmelwick roll, along with extra mustard and horseradish, as desired.

Second Place: Holiday Cranberry Orange Bread

Ingredients:
2 1/2 cups self rising flour
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 teas salt
1/4 cup softened butter
2 medium eggs (or 1 extra large)
3 tablespoons orange zest
3/4 cup orange juice
1/2 cup chopped pecans
1 cup fresh cranberries
Orange Glaze (optional):
1/2 cup 10X powdered sugar
2 tablespoons orange juice
Cooking Instructions:

Spray the bottom and sides of a slow cooker with cooking spray. Line with parchment paper, allowing the paper to come almost to the top. This will aid in removing it when done. Overlap if necessary to cover the bottom and sides. Spray paper with cooking spray.
In a medium size bowl, cream sugars and eggs. Mix in orange juice and butter. Slowly mix in flour and salt until thoroughly combined. Fold in orange zest, cranberries and nuts.
Pour into prepared slow cooker. Place a clean dish towel over the top before placing on the lid. This will keep condensation from making the bread too moist. Cook on high for 2 to 3 hours checking after 1 1/2 hrs. The bread is done when a toothpick comes out clean. Note: The bread will not be dark on top. Gently use the surplus parchment paper to lift the loaf out of the cooker. Let cool and drizzle with orange glaze.

Third Place: Crockpot Breakfast Casserole

Ingredients:
1 dozen eggs
1 cup milk
2 lbs. hash brown potatoes
1 lb. bacon (cooked and cut in pieces)
½ cup onion (diced)
3 cups cheddar cheese (shredded)
¼ tsp dry mustard
1 tsp salt
½ tsp pepper
¼ tsp garlic powder
Cooking Instructions:
Beat eggs until well blended. Beat in milk, garlic powder, mustard, salt and pepper. Set aside. Layer in crockpot: potatoes (may season each layer of potatoes with pinch of salt and pepper), sprinkle 1/3 onions, 1/3 bacon. Top with 1 cup of cheese. Repeat layers two more times to have total of 3 layers ending with cheese. Pour egg mixture over layers. For refrigerated hash browns, cook 6-7 hours on low. For frozen hash browns, cook 7-8 hours on low or until eggs are set. Serves 8.
"This would be a great Christmas morning breakfast. Just set it up the night before, and it would be ready by morning. My only suggestion is I might replace the bacon with sausage."

There are so many ways to save energy throughout the home! Every effort – both large and small – will help you save money on your energy bill. This fall, Rocky Mount Public Utilities is hosting a recipe contest to encourage customers to save energy in the kitchen. To enter the contest, simply submit a recipe that uses a cooking method other than the oven or stovetop. Examples of energy-saving cooking methods include the microwave, toaster oven and crockpot.  

Prizes:
  • 1st place: $150 off your utility bill

  • 2nd place: $75 off your utility bill

  • 3rd place: $50 off your utility bill

Everyone’s a Winner!

All customers who submit an energy-saving recipe will receive a free Watt’s Cooking potholder and chef’s hat (while supplies last). Limit one potholder and chef’s hat per household. The deadline to enter is October 31, 2017.

Contest Rules:
  • Click here to download an Entry Form (PDF, 206KB). Customers without internet access may call (252) 972-1269 to request an entry form.

  • The entry form must be complete with the entrant’s name, address, telephone number, email address (if available), recipe name, ingredients, preparation instructions, and cooking method. Recipes must include a cooking method other than the stove or oven, such as a crockpot, toaster oven, microwave, electric griddle, indoor or outdoor grill, electric skillet, or any other appliance.

  • Please note: recipes that use the stove or oven (even partially) will lose points.

  • The recipe using an energy-saving cooking method must be an original and must not copied from a published source (e.g. cookbook, magazine, cooking show and/or website, etc.)

  • There is no fee to enter the contest.

  • Customers may email a photo of the prepared recipe (optional) to energyspecialist@rockymountnc.gov. The photo must be a jpeg.

  • Bonus points will be given to customers who take a photo with the chef's hat and potholder and either post the photo to Facebook and tag Rocky Mount Public Utilities or email it to energyspecialist@rockymountnc.gov to be posted on RMPU's Facebook page.

  • Contest entrants grant the City of Rocky Mount the rights to reproduce, reuse and distribute the winning recipes without limitation or compensation. By submitting the recipe, the entrant agrees to these conditions.

  • At the end of the contest period, an online cookbook using the submitted recipes and pictures will be available for download on the City of Rocky Mount website. All recipes entered in the 2016 contest are available for download in the 2016 Watt's Cooking Recipe Contest Cookbook (PDF, 496KB).
